Sausage & Cream Cheese Dip recipe and good times with my college girlfriends

Every summer, my college girlfriends and I get together for a long weekend.  Over the years, we’ve meet at a variety of places.  Pella, Galena, the Amana Colonies, Chicago, Lake Michigan, and Riverside (as in the casino…in Riverside, Iowa).

Most times, we stick to Riverside Casino and Golf Resort for these reasons:  it is a central location for all (we have all spread out and live in places such as, Indiana, Omaha, Chicago, Kansas City, and Ames to name a few), they have a wonderful spa, their amazing suite at the end of the hall with the two attached rooms is TOTALLY AWESOME (sorry for that 80’s flashback), and they have an outdoor pool.  Many times, they have live entertainment (though it’s a crap shoot…we have a 50% chance that we’ll have good entertainment on the weekend we all get together and a 50% chance the entertainment will be HORRIBLE.  I say HORRIBLE unless you are well advanced in your years and enjoy some soothing band that plays songs that sound so jazzy and OUT OF DATE, along with anticipating bubbles to appear from a bubble machine while dancing swaying on the dance floor.  Yes.  Sometimes, it’s more than we can stand.)  (On one occasion, when the band was decent, we had the best time…though we wondered if one man that was shaking a rug on the dance floor was actually Bernie, the old man from the classic movie Weekend at Bernie’s.)

These reunions are so much fun.  Last summer, I wrote a post about it here (Girls’ Reunion Weekend 2014).  Between reminiscing about college days and laughing so hard we ALL feel like we’ll pee our pants, we ALWAYS have a great time.  And…we eat lots of good food that we all bring to share.

The food that we bring to share…oh, it’s so good.  Which brings me to today’s post.  A few summers ago, Glenda brought a delicious dip to our Girls’ Reunion.  THIS DIP.  Glenda’s dip.  It. Was. Amazing.  Soooo delicious.  And the name of the dip?  White Trash Dip.  Yes.

Being politically correct in all I say and do (hahaha), I thought I’d change the name.  So you won’t be afraid to tell your co-workers or family the name of this delicious dip when you bring it to your next gathering.

Yes.  Only three ingredients make this divinely delicious, warm and yummy appetizer.

Sausage and Cream Cheese Dip (aka…White Trash Dip)

2 lbs. browned sausage (I like to use 1 lb. of spicy sausage and the other 1 lb. mild sausage)

4 packages cream cheese

2 cans Rotel tomatoes

In frying pan, brown the sausage.  Set aside.  Place the four blocks of cream cheese in a microwave dish and soften for about 1 minute.  Stir and heat the cream cheese more.  When it’s very soft and warm, put the cream cheese into a crock pot.  Add the 2 cans of Rotel tomatoes (do not drain) and the 2 lbs. of browned sausage.  Stir until mixed thoroughly and keep warm in crock pot.  Serve with tortilla chips.  (You can half this recipe to make a small appetizer.)

Now you have a quick and easy appetizer that everyone will love when you bring it to your next family get together or college friends’ reunion.  As for the green and yellow beer hats that we were sporting in the picture above…Shirley bought those for us…as a “gift”.  What can I say…I have wonderful girlfriends. 🙂  Between bringing White Trash Dip and felt beer hats from Target’s Dollar Spot, I’d say I’ve got some of the best girlfriends anyone could ask for.  How can I ever thank Central College enough for introducing these girls to me?  Maybe I’ll write a book about it…
