Dinner Club gals and Chicken Tortellini Soup…the BEST soup EVER

Well friends, I am about to share with you some of my very favorite people and one of my very favorite soup recipes.

A long time ago, I taught with some very dear friends…Adri, Rhoda, Sara, and Julie.  We had a Dinner Club.  We got together once a month at each other’s houses and shared a meal together.  The hostess cooked the main course and the rest of us each brought one thing (either a side dish, appetizer, bread, or dessert).  This was a great way to swap favorite recipes and have wonderful times bonding over food and friendship.  Dinner Club gals will always have a special place in my heart…love each of them dearly.  Our dear friend, Adri, shared this recipe with us on one occasion.

And ever since, it’s been a recipe that I make at least once a month (and even more, during the fall and winter months).  Hubby loves this soup and you know when my hubby boasts about how great this soup is…it HAS to be great!

I’ve taken Chicken Tortellini Soup to family get togethers.  Served it at our boys’ birthday parties.  Brought it to school for Soup and Sandwich Day.  It’s my “go to”.  An easy recipe, yet sooooo amazing.

So, Adri, Julie, Rhoda, and Sara…this post is for you!  Thank you for sharing recipes and wonderful times with me way back when we all first became friends!

I’ve tweaked the recipe slightly over the years.  But it is still that “amazing soup” that will leave everyone begging for more.  And you’ll need to share the recipe with them.  Guaranteed.

Chicken Tortellini Soup

1/4 c. butter

1/2 c. finely chopped onion

1 c. chopped celery

1 c. chopped carrots

3 chicken breasts cut into pieces or about 2 c. of shredded rotisserie chicken

1/4 c. flour

1/2 tsp. pepper

1/4 tsp. salt 

1 – 32 oz. box of chicken broth 

1 – 14.5 oz. can of chicken broth 

1 – 16 oz. package cheese tortellini (cook according to package)

In a large pan, melt the butter and then, add the onions, celery, and carrots.  Heat until vegetables are soft.  Stir in the flour, salt, and pepper.  Gradually add the chicken broth.  Stir in the cooked chicken.  Cook until it boils for 1 minute.  Add the cooked tortellini.  Ready to serve!  Ladle into bowls, add shredded cheese on top, if you’d like.  This recipe makes about six hearty helpings.  * I double this batch for a crockpot.
